Spinach and Gouda Cheese muffins

  1. Pre-heat the oven to 360°F.
  2. Finely chop the spinach, set aside.
  3. Grate the Gouda and Old Dutch Master and set aside also.
  4. Pour the milk and olive oil and crack in the eggs, whisk together. Add it to the flour, baking powder, old Dutch Master, gouda, spinach and a tiny pinch of salt.
  5. Line your muffin trays with paper cases and half fill with the batter, add the sour cream on top, then spoon on the remaining batter, making sure the sour cream is covered.
  6. Sprinkle with pumpkin seeds and bake for 20 minutes or until golden brown.
